This innovative yeast strain is characterized and distinguished by its excellent heat tolerance and its ability to convert part of the sugar into lactic acid, thereby improving the aromatic profile and stability of the wine.
It possesses an extraordinary physiological ability to quickly initiate fermentation, ensuring a regular transformation of sugars until complete conversion, even at high alcohol levels. This occurs even under conditions of low organic and inorganic nitrogen (APA between 80 and 100 ppm). Consequently, it is a yeast capable of completing alcoholic fermentation independently. However, when used in combination with a strain of Saccharomyces cerevisiae (following the
specific usage instructions for the combination), it offers perfect integration in terms of aroma and taste.
