
iYEAST® HARVEST PROTECTION is an innovative formulation of Chitin glucan from Aspergillus niger and cell membranes naturally rich in glucans from Saccharomyces cerevisiae.
iYEAST® HARVEST PROTECTION is characterized by its adsorbing properties which are best expressed in liquids with an acid pH (range between 3.00 and 6.00) as occurs in wine or beer.
This important characteristic is evidently manifested towards almost all the volatile components derived from micro organisms that have in their cell wall, a component of chitin associated with beta glucans: this is typical of the microorganisms involved in the alcoholic, malolactic and malo fermentation processes. alcoholic, with the exception of yeasts.
In fact, yeasts, containing very little chitin compared to glucans, produce pleasant aromas unlike other microorganisms, iYEAST® HARVEST PROTECTION therefore enhances the aromas by eliminating the unpleasant odor component produced by all the other microorganisms.
